Poached Pears

These are GREAT!

Poached Pears in Honey,Ginger,and Cinnamon

Portion Size: 1 pear


Ingredients

Moscato wine
Simple syrup (½ and ½ )
Cinnamon stick, broken in ½
Honey
Fresh ginger, peeled, finely chopped
Vanilla bean, split lengthwise and seeds scraped
750-mL bottle

In a saucepan large enough to hold all the pears, combine.  Add the vanilla bean seeds and the pod.  Bring the mixture to a simmer, stirring occasionally until the honey has melted. 
Ripe Anjou pears, peeled

Add the pears to the liquid and simmer for 15-20 minutes, turning occasionally, until the pears are tender. 


Remove the pears from the liquid and allow to cool.


Continue to simmer the liquid until it thickens and is reduced by half (about 15-20 minutes).   Cool to room temperature.  Remove the chunky stuff. 
Vanilla ice cream
3 cups
Place the pears on small serving plates with a ½ cup scoop of vanilla ice cream.  Drizzle with the syrup.  Serve.





Can also drizzle with chocolate syrup

Leftover syrup can be used to flavor martinis.

Giada’s Raspberry

Ricotta Mousse

Ricotta cheese
Raspberry Jam
15 ounces
½ cup
Mix together
Whipping cream
1 cup
Whip until soft peaks form
Sugar, Confectioners
3 Tablespoons
Add to whipping cream and whip until firm peaks form.
raspberries
1 cup
Fold into cheese/jam mixture.


Serve in individual sherbet cups.  Top with berries.


Store in refrigerator until ready to serve

Cornstarch
Vinegar, white
Water
¾ cup
4 teaspoons
1/3 cup
1/3 cup
Combine and bring to a boil for 5 minutes.
Beets, canned, sliced, drained
2 15-ounce cans
Add and simmer for 30 minutes over low heat. 
Butter
Salt
Pepper, black ground
3 Tablespoons
¼ teaspoon
¼ teaspoon
Stir in and remove from heat.


Serve hot or cold.



Can use cider vinegar

Beets - I hate 'em too, but this is pretty good with yellow fresh ones...

Beet Napoleon

Beet Napoleon

Portion Size: 1 napoleon


Ingredients

Amount

Procedure
Beets (red are prettier, but yellow are tastier)
4 depending on size
Cook, peel, slice, set aside
Phyllo
Oil, olive
Sesame Seeds
36 sheets
Enough to brush (1/2 cup?)
Enough to sprinkle (1/4 cup?)
Preheat oven to 400°F.
6 sheets to a layer.
Take one sheet, brush with oil, sprinkle with seeds, repeat until 6 sheets to a layer.
Cut each sheet with a pizza cutter into 4 pieces.
Bake for 15 minutes or until golden brown.
Heavy Whipping Cream
Horseradish
16 ounces
2 Tablespoons
Whip cream until soft peaks form.  Add horseradish and continue beating until stiff peaks form. 
Bitter greens or sprouts
Vinaigrette

Toss together – don’t over-dress!


Build napoleon:
Phyllo
Beets
Horseradish cream
Phyllo
Beets
Horseradish cream
Phyllo
Top with dressed greens


Serve and enjoy.
